Go To:

Start Menu -> Settings -> Control Panel -> Display

Then click the "Settings" Tab at the top... and there should be a slider or some way to choose your screen size.

Set the screen size to atleast 1024 x 768

Thats what has worked best for me.

I keep mine at 1152 x 864. Its just my preference, but i can see the game in its entirety, and still have a decent amount of screen space left.
